This is a dead simple and mild but incredibly tasty curry.
Ingredients
2 chicken breasts, diced
1 medium onion, sliced
2 cloves of garlic, chopped
1 tin of chopped tomatoes
2tbs East Coast Chilli Company Mango sauce (Passion)
½ tsp turmeric powder
1tsp ground coriander
1tsp cumin powder
1tsp mustard seeds
1tbs vegetable oil
Instructions
Heat the vegetable oil in a saucepan over a medium heat
Add the onions and garlic and fry until soft, about 4 minutes
Add the mustard seeds and fry until they begin to pop (keep the lid on the pan!)
Add the turmeric, coriander and cumin powder and fry for a further couple of minutes
Pour in the tin of chopped tomatoes and bring back up to a fast simmer
Stir in the East Coast Chilli Company Mango Sauce
Add the diced chicken breast and cook through
Serve with rice or naan bread.
