Winter Warmer Soup

Emailed in from Jennifer Hutchinson. For those cold, dark winter months, something to warm your cockles and brighten your days.
  • 2 sweet potatoes, peeled and diced
  • 3 parsnips, peeled and diced
  • 3 carrots, peeled and diced
  • Chicken or vegetable stock
  • A small cup of red lentils, rinsed well
  • 1-2tbs East Coast Chilli Company Chipotle Ketchup (Desire)
  • Dash of cream (optional)
  1. Place vegetables into a saucepan and cover with the stock
  2. Bring to the boil, add the lentils, turn down the heat and simmer for 15 minutes
  3. Towards the end of the cooking, add the East Coast Chill Company Chipotle Ketchup (desire) and heat through
  4. Remove from heat, allow to cool slightly then blend until smooth
  5. As Jennifer says: “This will produce a stunning, orange, smooth soup, which can be enhanced further by a dash of cream. It will keep in the fridge for at least 4 days. It can be altered by using any vegetables that do not change the beautiful colour, eg leeks or cauliflower.”
